Two Types of Chef Knives - German and French
The Chef Knife is the most used knife in any
kitchen.
Being a professional or well equipped home kitchen.
The chef knife can be 6 to 12 inches long and
have a
blade width of 2.5 mm at least.
Although it may be a bit scary for a new cook to
use
a chef knife, it is highly recommended to get used to it.
The main reason is that working with a small
kitchen
knife will tire your hand after a while.
Using a longer knife makes the work much easier
and faster.
There are two styles of chef knives:
The French Chef Knife has a curve towards
the tip of the
blade, which enables to make wave cutting moves to
slice, dice,
or chop food in a forward motion.
Once you get used to working in this manner, it
becomes very
easy to slice a large amount of food effortlessly and
very quickly.

Sabatier (French Chef Knife)
The German Chef Knife has a straight blade
all the way to the tip.
This type of blade is used to slice in a
pull motion towards your body.
There is no "better knife build" or "preferable
knife build".
Both knife types are equally acceptable and using either one of them
is at your own comfort.
Lengthwise, the most common, and to my opinion,
the most comfortable length for a
chef knife is 8".
But here again it is a matter of comfort in usage of the chef knife.
